Creating Menus

Hi
I'm fairly new to CMSB, but so far I've found it to be great to work with and my clients are all very pleased with how it works from their end!
I'm working on a new site at the moment and it has quite a few categories with sub categories which are further sub divided, for example something like this:
Products
Product1
product1_sub1
product1_sub2
Product2
Product3
News
News1
news1_sub1
news1_sub2
News2
News3
Is there a step by step guide that shows how to set up a structure like this in Section editors. I would also like to the menu to be updated dynamically on the site so when new sections or subsections are added then the appear automatically. Is there any documentation that explains how to display this type of menu.
