How to tell CMS an article should go on one category?

Hello, I am building a site which has "nested" menus:

Main product line - Sub product line - Products

I created the Sub Product lines as "Category" type and trying to fiugure out how to tell the products under which category they should go, but I can't find where to tell them their parent category. Can you point me in the right direction?
