How to hide products

I have some products that are not ready to be made live. I do not want to delete them. How do I make them inactive?

I also have some outdated items which I want to hide but not delete. How do I make those inactive and not show on the site?



Please advise.

Zip is exactly right about the 'hidden' field functionality. It's very handy.
