Is there a way to create a field for entering a time, without a date?

Is there a way to create a field for entering a time, without a date?
No, the date can't be removed in CMS Builder. You can remove the date when outputting the data on the frontend to just show the time.
Are you needing to do calculations on the time? If not, could you use a text field for time?
If you can let us know what the end results should be, we can provide some suggestions.
